Hello. My umbrel lightning address seed was compromised. I closed all channels and moved on chain btc to a secure wallet. Can I establish a new address and seed without totally reinstalling umbrel?

Yes, folow the instructions from Umbrel troubleshooting manual in the section “Reset your Umbrel user data”.
No need to do anything else. It will generate a new user, new seed, new wallet, new onion address and most important you do not lose the sync data.
